I wish I could tell you that I cook a gourmet meal every night. It is just not possible. With 3 kids, sports and busy schedules all around, getting dinner on the table is a challenge. Not to mention, I don't have the patience to cook and clean up such elaborate meals. Also, my kids don't have the stamina to behave while I cook those alleged meals. So, as requested, here are the links to the meals I make most. Most of them are 1 pot/pan meals which is a dream for clean up; I also use my crockpot a TON!
My trick is having a plan, before I grocery shop, I pick my menu for the week (aka I browse my list of dinner ideas below). Each kid gets to pick a meal and then Jon and I decide the rest. Inevitably JJ picks Tacos and Westyn picks "Shrimp and Pasta" aka Shrimp Scampi. I then use that menu to grocery shop. I do much better when I have a plan and it makes my week night easier when I know what I am making. It also helps keep the grocery bill down.

Vegetarian Acorn Squash - I add ground turkey to this
Spinach & Mushroom Quinoa - I use pearl couscous instead
Ground Turkey & Sweet Potato Hash - this is always in my weekly rotation
Gnocchi with Sausage - Husband's Favorite
Vegan Lentil Soup - I make pillsbury grands with this and my kids dunk it in the soup
